Spiku berasal dari kata Spekkoek (bhs. Belanda) yang artinya kue lapis. Spiku ini dibuat 2 lapis, dengan selei sebagai perekatnya. Spiku telah ada sejak jaman Belanda dan dibuat berdasarkan Resep Kue Belanda (Dutch Cake Recipe) , namun telah disesuaikan dengan citarasa Indonesia.
